Demeter (Greek) or Ceres (Roman) is the goddess of the earth, harvest, agriculture, and plant life.  One of Zeus/Jupiter's sisters, she is the mother of Persephone/Proserpina.  When her daughter was abducted, her anger caused the earth's harvest to fail.

Aside from those depicted here, her symbols include a torch, symbolizing her seach for her daughter, a chariot pulled by dragons, and a cornucopia.
